At the beginning of experience harvest period, the results showed that the moisture content of sweet potato seedlings was 83.28%, when the loading rate was 10 and 20 mm/min the shear force was 72.1 and82.7N respectively. With the increase in growth time, it is concluded that the moisture content of sweet potato seedlings decreases, and the shear force increases with the increase in growth time and cutting speed.
